Important: You Will Need a Digital Scale & Thermometer

These recipes are written primarily by weight, not volume, so a digital kitchen scale is required. Weighing your ingredients provides significantly more accuracy and consistency than relying on measuring cups.

You will also need a digital probe thermometer for preparing the caramel. Proper temperature is important for achieving the correct consistency and preventing the caramel from being over- or undercooked.
