Rachel Cox is a sugar artist and creative instructor with over 25 years of professional baking experience and more than 15 years of teaching thousands of students how to create beautiful, delicious desserts.
Her journey into baking started early — around four or five years old in her grandmother’s kitchen, helping make candies and holiday treats. What began as childhood curiosity quickly turned into something much bigger. By the age of twelve, Rachel was already baking professionally, and she has never looked back.
Her first bakery job was at the well-known Gambino’s Bakery, where she began refining her skills in a professional kitchen. Over the years, Rachel developed a reputation not only for her artistic cakes and desserts, but also for her ability to teach complex techniques in a way that makes students feel confident and capable.
Rachel has taught everything from beginner cookie decorating to advanced cake structures, including intricate 3-D and gravity-defying cakes, as well as bread making, French macarons, and other specialty techniques. Recently, her classes have expanded beyond baking into other creative outlets, including jewelry making — proving that creativity doesn’t always stay inside the kitchen.
More than four years ago, Rachel opened It’s Just a Cookie, a studio dedicated to teaching, creating, and celebrating the joy of baking and art.
Her philosophy is simple:
“It’s just a cookie.”
In a world where desserts are often treated with intense pressure and perfectionism, Rachel believes baking should be about joy, creativity, and having fun. Whether a cake looks perfect or a cookie is slightly crooked, what matters most is the experience of making something with your own hands.
Rachel approaches baking from both an artistic and scientific perspective. Great cakes aren’t just pretty — they rely on chemistry, technique, and experience. Her work focuses on creating cakes that look beautiful and taste just as good, something she feels is often overlooked in the industry.
Today, Rachel focuses primarily on wedding cakes and luxury celebration cakes, while continuing to teach creative classes that inspire people to try things they once thought were impossible.
Outside the kitchen, Rachel is known for being something of a creative jack-of-all-trades. She enjoys many forms of art and hands-on work — from building furniture and making jewelry to hunting, fishing, riding four-wheelers and getting dirty.
And despite her career making beautiful cakes and cookies for others, her family will tell you the truth:
They usually get the scraps.
